Vanuatu is famous for its Poulet fish

Thanks to local fisherman Danial Nauka for yet again supplying us with another batch of freshly caught Poulet fish for the restaurant.

These fish are caught in 400 metres of water about 5 miles off Eratap and have just been delivered. They are a wonderful tasting fish and very popular with our guests.

Our head cook Rose is about the sharpen her knife and begin the filleting process. Nothing like super fresh fish!
